Whenever I do a contest, they send me one of whatever they give away. So I got the Hungry Girl cookbook and am IN LOVE with all the recipes. You should really consider getting it. She even has a website which I don't know the URL of at the moment.

Cup Bell Pepper, Jalapeno, and Onion, toss into skillet until slightly softened. Add Diced tomatoes and mix with veggies. Add Chicken Stock and bring to a boil. Add Brown Rice, bring to a boil and reduce heat to low and cover.
You're basically just cooking the Brown Rice per instructions on the box. Super simple and yet full of flavor and its HEALTHY lol

I make whole wheat pizza dough and top with garlic-y tomato sauce and skim mozzeralla cheese BAKE and then top with arugila. It is sooo good and I think it is pretty healthy. for pizza anyway.
