Just made chicken pot pie - the lazy way
I LOVE chicken pot pie! But I can't stand all the prep work that goes into making it the real way. That's why I frequent Irish pubs in Woodside - YUMMY!
But when I want to make it at home, here is a super quick way to make this hearty meal.
- One bag of frozen mixed vegetables (diced)
- Half bag of frozen chopped onions
- One packaged of pre cooked grilled chicken strips (not frozen)
- One can of condensed chicken soup
- One rolled out pie crust dough
- Salt, pepper, italian seasoning to taste

Directions:
Preheat oven 425
- Add a bit of oil to a pan along with the frozen veggies and onions - cook a bit
- Add the chicken chopped up - cook a bit
- Add the condensed soup can plus one half can of water - mix and cook a bit
- Sal, pepper and italian seasoning - go nuts
- reduce heat to low and simmer until the other stuff is done
- THEN get a baking pan and roll out the pie dough. Take a mini onion soup crock pot and twist to make a circle of dough. You can get 5 out of one round roll if you take the left overs after making 4 and flatten them out.
- Bake for about 10 minutes (watch to make sure they aren't getting too brown) at 425.
Assemble and serve. The entire thing should take you about 15 minutes! Easy meal to make for lunch or dinner.
I've even served this to friends at a dinner party and everyone was so excited about it. The presentation is really nice... so the only person that will know how simple it was to make is you!
