Attempted A Quiche - And Failed

I upgraded my Blackberry to the newest version of software because it kept acting funky and can't figure out how to restore everything. Hubby is working on it - otherwise I would have taken a pic of my zucchini quiche.

It was almost good...

I think I added too much bisquick. Yes, I said bisquick. I wanted to do the kind that you mix all together and pour. But it came out really dense. Like, if I wanted to take one of my children out... it would be possible with one throw.

ANNNND it feels like Friday doesn't it????

Yesterday, I had tickets to see Guys and Dolls but obviously couldn't go. I sent a friend who thankfully is going to write her review up for me. I felt terrible not being able to cover it myself, but there was NO WAY I was heading out the door. 

Kids are sleeping. Hubby and I are working - and it's still Thursday. Any weekend plans you care to share?

Tomorrow we have dinner with Bill's friends and then Saturday we have a poker night with some couples from town. It's our first one together - so it should be fun!

I've never made quiche with bisquick. I just use eggs, spinach, onion and muenster cheese. Great for low-carb dieters...bad for low-fat dieters.

It looks good. Is that a WW recipe? Or are still doing that now that you have hit your goal and then some? My weekend plans do not include the internet. We are changing internet providers and the one we are dumping is not being very co-operative. So they will have our service down all weekend from like Friday to Monday when the new one will start. I am trying not to spend money but I just might have to go shopping. Hubby will be working all weekend. I am trying to rent 'Nights in Rodanthe' but it is always checked out. Of course I have only been checking that $1 movie machine thing at the grocery store. Maybe I will have to break down and go sign up at Blockbuster. I just live so far away from one.

That quiche recipe looks good - I will have to try it! A few college girlfriends are getting together tomorrow and Sunday is tax day - crossing our fingers on that one! We are also supposed to get a huge snowstorm so not looking forward to that (in MN)...

Vera, here is a recipe for a great weeknight quiche and it is only 4 points per slice. My kids even love it.

1 Cup sliced mushrooms 4 eggs
1 Cup chopped onions 1 C. part skim mozzarella
1 pkg. frozen spinach frozen pie crust
1/3 Cup fat free mayo 1/4 c. bacon bits
1/3 Cup fat free milk

Preheat to 375, Spray skillet with non-stick spray, add mushrooms & onion. Cook 5 min. Stir in Spinach.
Mix mayo, milk and eggs, add spinach mix and cheese. Pour into pie shell. Sprinkle with bacon bits. Bake 50 min. Perfect every time. It is even good re-heated. Makes 6 servings.
